Corn Soup Ingredients

*Remove cooked corn kernels from 10 ears of corn
*1 cup onion
*1/4 cup garlic
*1/4 cup celery
*1 cup cream
*1/2 cup butter
*1 quart chicken or vegetable stock
*2 tbsp sugar
*Salt to taste

Directions

In a large stockpot, melt the butter and sweat the onions, garlic, and celery (Sweating means to cook over low heat without browning. You just want to heat it enough to release the flavors).

Add the corn, stock, and sugar. Simmer for 20 minutes.

Add cream and bring the mixture back to a boil.

Blend the mixture with an immersion blender or transfer the mixture to a blender. Blend until smooth.

If desired, strain the soup through a sieve or cheesecloth to remove any leftover pulp.

Salt to taste and enjoy!
